Gluten Free Vegan Peanut Butter Banana Pancakes Sometimes the days gets ahead of you and you find yourself in a panic to feed yourself and your family. Well last night things were a bit crazy in our house. As I picked my daughter up from ballet at 6:30 pm she asked the dreaded question. What’s for dinner? Well it sent me into panic mode! I didn’t know. Now normally I have dinner planned or at least an idea of what I am going to serve especially this close to dinner. But last night this was not the case. I told my daughter that I absolutely had no idea. In response my wonderfully helpful Zoe replies “how about breakfast for dinner?” Now breakfast for dinner is something we used to do often because it was quick, easy to make, tasty, and satisfied everyone in the family. We always served pancakes, bacon, and eggs. It was a great treat. But in recent years this was not so great of a treat because of the food allergies and our family’s dedication to health and healing. However I had no choice because afterall I couldn’t let my kids and family starve. I had to think quickly. We make gluten free vegan pancakes on the weekends for breakfast all the time. But for dinner I wanted something alittle filling and nutritionally better. To add to all this my daughter has recently decided to vegan not just dairy, egg, and gluten free. So I needed to really step up my game by providing the nutrition growing children need while still satisfying the taste buds. Plus feeding a husband who needs to feed his hunger. So when I got home I whipped up these yummo gluten free vegan peanut butter banana pancakes. They were fluffy and tasty. I served it with a big glass of green juice made with romaine, dandelion greens, apple, and pear. I do this sometimes in place of a salad or veggies at mealtime. Dinner worked out great because everyone was satisfied and I still felt like I did a great job of feeding my family a nutritious meal.
