Kid's Lunch 9/27/2011

Last night’s dinner was a big hit with the family. Even better was that I was easily able to use the left overs to make a bento box lunch for the kids this morning. I sent them to school with the left over veggies and rice. Along with it some quick miso soup (thanks to Trader Joe’s), roasted seaweed, and an apple. I love it when things go smoothly in the morning.

Korean Veggie Bowl

Korean Veggie Bowl One of my favorite Korean dishes is called BiBimBop which is traditionally made with rice, veggies, meat and topped with a fried egg served in a sizzling hot stone bowl. I am trying to stay away from grains and other sugars for the next few weeks. So here is my version of BiBimBop. Just tons of veggies, including kimchi, with special hot pepper paste dressing and sesame oil. To eat I simply have to mix and enjoy. This is just another one of my recipes that is “A Salad But Not.”. A great way to get tons of veggies without really eating them in a salad form. The texture and taste is different then that of a salad but you get all the nutritional benefits.

Picnic with Jason Mraz

Heading over to the Jason Mraz concert in a little bit at Merriweather Post. We have lawn seats so we are taking a blanket and a nice picnic to enjoy while we listen to some amazing music. Even better the opening act is Colbie Caillat. I am so excited!!! Kid's Lunch 9/23/2011

Bento Box Lunch It was hard for me to get up this morning because my bed was so warm and it was pitch black outside. But I had to get up to send my kids to school so I wanted to do something that would get my day started right besides drinking my water and having my morning tea. To have some fun I decided to make Zoe and Ty a bento box lunch. It took about ten minutes to make because I already had the rice cooked in the rice cooker from last night’s dinner. It was fun to make and it woke me right up to do something creative and fun the the kitchen. The bonus will be when the kids open up their lunch boxes to find a fun surprise. Creamy Vegan Broccoli Soup

It’s started out as such a sunny and beautiful day. Then mid afternoon it started with the rain with winds. Haven’t we had enough rain! Well it ended up being the best weather to try out a new recipe. A creamy vegan broccoli soup. Especially good thing to make for dinner since my daughter Zoe was home sick today. She loves soup. It’s one of her favorite things to eat. Plus her favorite veggie happens to be broccoli. So mix them together I have the perfect meal to meet her appetite. It’s a great soup because it is packed full of great veggies with a creamy texture but without the dairy that clog the sinuses.

Gluten Free Vegan Biscuits

I did it!!!  Here are my gluten free and vegan biscuits.  They turned out so good and flaky. They were buttery even though I did not use butter to make them.   I was totally happy with the results.  We served it with a great thick beef and potato stew for dinner.  Then next day we at the left overs with jam for breakfast.  It was a big family hit.

Gluten Free Vegan Cinnamon Bread

I had a total craving for cinnamon bread. I went on a mission for this chewy cinnamon sweet bread. Spent time in the middle of the afternoon figuring out a recipe to meet my cravings. Here is a picture of my gluten free vegan cinnamon bread. I toasted on a frying pan with a bit of coconut oil to make it nice and warm. The recipe isn’t perfect but it sure hit the spot!

Fruit Shaved Ice

Fruit Shaved Ice This was a refreshing dessert Michael and I shared this afternoon. This Asian treat includes tons of shaved ice (think really soft and fluffy snow you can eat), topped with a scoop of vanilla ice cream, red beans, tapioca drops, and tons of fresh fruit. It’s light, refreshing, and slightly sweet. It’s such a wonderful treat that will leave you cool and satisfied.
