Gluten Free Vegan Seeded Bread My kitchen smells so good right now! Nothing is better then fresh baked bread from the oven. This is not such an easy thing when you are eating gluten free. I am getting myself ready for my gluten free bread baking class coming up this fall. I am perfecting my recipes and techniques so my family is getting to enjoy fresh bread almost daily. The breads are coming out so good and so close to the real thing in both taste and texture. I have used the dough to make regular bread loaves, French baguette, pizza crust and even the cinnamon buns I posted last week. So get ready everyone to eat real bread again. These breads will make those eating gluten free and those that aren’t equally satisfied.

Homemade Fresh Peach Ice Cream

Last month we were in Valdosta, Georgia visiting with my husband’s parents. During our visit my father-in-law took me to a peach orchard where their specialty was their fresh peach ice cream. What makes this ice cream so special is the quality of ingredients they use. They use fresh cream, peaches from their orchard and sugar. Even though I usually stay away from dairy I couldn’t not enjoy this treat my father-in-law wanted to share with me. It was a very smooth ice cream with a fresh peach flavor. It was a perfect treat for the hot Georgia weather. Well today at home it is equally hot and humid outside. I wanted a refreshing afternoon treat for my kids. So I took some of my peaches from Beechwood Orchards and some bananas to make a creamy ice cream that even my father-in-law in Georgia would love. However, this version has none of the sugar or dairy to hold back your journey to vibrant health nor the calories. It does have all the texture and flavor that we all crave in our ice cream on a hot day. Really, it’s that good especially if you use good quality peaches and bananas. Peach and Blackberry Crumble

Peach and Blackberry Crumble Dessert last night was a big hit and took only 10 minutes to prep and 25 minutes to bake. I purchased these peaches from Beechwood Orchards at the Leesburg Farmer’s Market on Saturday. I had been buying peaches and plums from them all summer. There peaches are super juicy and full of flavor, perfect for any recipe or just eating plain. My family and I have been eating several peaches for breakfast then enjoying them in juices or smoothies in the afternoons. Last night I decided to bake them instead. Beechwood Orchards is a truly family owned and operated orchard. It has been around for five generation in Adams County in Biglerville, PA. Currently it is being run by David and Tammy Garretson, along with their son Shawn Garretson, and daughter Melissa Allen. Now even Melissa’s young daughters Isabelle and Cammy help around the orchard. Shawn can be found selling his family’s wide selection and varieties of peaches, plums, berries, and apples at the Leesburg Farmer’s market every Saturday. So check them out and let them know I sent you. I can truly say it is going to be worth the short trip to Leesburg. Farmer’s markets are a great place to take kids to show then first hand what real food should look and taste like. It is something my kids look forward to every Saturday. They walk around, talk to the different farmers, and enjoy a breakfast of fruits fresh from the farm. Peach and Blackberry Crumble Preheat oven to 375 Coat a 9x9 pan with a little coconut oil and set aside. In a bowl mix: 4 peaches, pit removed and sliced 1 pint blackberries 1/2 maple syrup 1 tsp arrowroot starch dissolved in 2 tbsp water 1/2 sea salt In another bowl mix: 1 1/2 cups Gluten Free Oats (I use Bob’s Redmill) 1/2 cup almond meal 1/3 cup melted coconut oil 1/2 cup maple syrup 1 tsp vanilla 1/2 sea salt Add the fruit mixture into the square baking pan. Top with the crumble mixture. Bake for 25 minutes until golden. Cool for 5 minutes then serve.

Learning to Ride a Bike

Unlike most adults I do not know how to ride a bike. You may ask how that is possible. Well to make a long story short, when my family immigrated to the US I was nine years old. My parents were in there mid thirties, had two kids (ages 7 & 9), did not speak a word of english, and only had $2,000 to their name. Growing up we were very poor and had a rough life. My parents worked hard to put food on the table and provide shelter but not much more. We could never afford luxuries even a bike nor did my parents have time to teach me after working 16 hours a day. So, unlike most kids, I grew up without learning to ride bike. When I was in high school my dad was finally able to get a bike and teach me. However, I was about 16 and felt too cool to be having scrapes on my knees in order to learn how to ride. I fell a lot! So I gave up. That being said, I did teach my youngest sister and both my kids how to ride their bikes. I understand the mechanics of bike riding but the actual doing is where I fall short. Well I made a commitment to myself this year that I must do something out of my comfort zone and learn to ride a bike. I have used the excuse that I couldn’t learn because I didn’t have a bike. Well I do now. So this morning with the help of my husband and kids I learned to ride a bike. Hurray for me! Someone recently asked me how I stay looking young, was it the food? I told them it was a combination of things. One, I am Korean so that helps. Two, I try to eat in a way the keeps my cells clean and healthy. Three, I keep my body moving. But more importantly I am constantly evolving. What do I mean? Well I try to make sure that I am constantly learning, experiencing, and participating in new things. We stay young when we are growing. When we have finished learning and experiencing we become old. When you feel you are stuck in who you are and where you are in life there is no more growth to be had. Young people are always evolving, learning and experiencing. This is what makes them young. If you apply the same principles at an older age you stay young because you too are still growing. When you apply this principle to your life you will start thinking, feeling, and even looking younger. The world is such a large place, full of exciting experiences, and interesting people. Start living and you will see amazing changes in your life. Be present and embrace all that is different and new. When we continue to do the same thing everyday we will stay the same and get older. If we learn, experience, and work on bettering ourselves in every way we will stay young. This is the fountain of youth people! So go out and do something you have always wanted to do but was too scared, make a new friend, read a new book, take a class, hang out with friends or family, and live life. For me today it was learning to ride a bike at the age of thirty-seven.

Picnic Lunch for my Friend

My wonderful friend Elizabeth and her kids are visiting us this afternoon. So a packed us a nice lunch that we can enjoy pool side. Here is a picture of what the lunch looks all packed up.
