Mushroom Stir-fry over Rice Noodles

Tonight dinner is a mushroom stir-fry over rice noodles. We got some beautiful mushrooms from the farmer’s market over the weekend along with some squash, eggplant, and purple peppers. Stir-fry is simple, quick to make, and a great way to get your veggies. How fast is it you ask? I was able to get it on the table within 20 minutes. That’s faster then ordering takeout!
