Potato Skins with Grilled Asparagus

After spending a few days filling our stomachs with heavy boardwalk junk food the kids and I really need to detox. The problem is that we still crave the high fat high sugar foods. I find that it is best to ease into any type of detox. So tonight I made, upon request, potato skins with some grilled asparagus. I know you are thinking, “this can’t be healthy or a detox food!” By no means am I saying this meal meets any of my detox requirements. However it will ease us back into our normal clean way of eating. It’s similar to the junk food we have been eating but homemade and completely vegan. We have to start somewhere. The thing about detoxing is if you go too extreme too fast it will backfire and you will be miserable. First step into our family detox is the food being homemade, gluten free and vegan. Next it will be adding back large amounts of green juices, veggies, and fruit. This means the farmer’s market tomorrow morning.

Gumbo

I wish you could smell and taste how good this gumbo turned out. We are going to enjoy it on the deck with a nice glass of wine. The weather is so perfect and sunny. We spent the whole day spending time as a family. First going out to lunch, then playing and getting wet in the water fountain, followed by lunch at the pool. The gumbo was just a great way to finish off our Sunday of family fun.

I lucked into some beautiful looking okra yesterday when my family and I were at the farmers market. Like most I don’t often cook with okra. But I couldn’t resist buying them because it made me crave some gumbo. So right now I am preparing some shrimp stock to make gumbo for dinner this evening.

Jam Night, Camp Ballibay

Jam Night, a Camp Ballibay tradition where each department has a jam session specific to there specialty. We had a food jam session where 24 campers helped make enough jam bars to feed the entire camp two times over. It was a night of fun and tons of mess.
